Because I Like Things That Are Easy....

...I thought I would share some recipes with you, in case you like to cook simple things too! One of my sister-in-laws sent a bunch of recipes for Christmas, and I have slowly started trying them out with two chicken recipes. Someday I will get to the more challenging ones, but for now, I love these! :) I usually cut both of these in half, since I am really only cooking for Cameron and myself, and so it makes about three pieces of chicken, so there is enough for Cameron to bring to lunch the next day.

RECIPE 1 - RANCH CHICKEN

3/4 cup grated parmesan cheese
1 stick butter
1 1/2 cups crushed cornflakes
1 pkg dry ranch salad dressing mix
6-8 boneless, skinless chicken breast halves

Melt butter in microwave. Mix together in another bowl the parmesan with crushed cornflakes and ranch mix. Dip chicken breasts in butter then coat with cornflake mixture. Place in a greased/sprayed baking dish. Bake uncovered at 350 degrees for 45 minutes or until the chicken is cooked through.


RECIPE 2 - GARLIC LIME CHICKEN

1/2 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
6 boneless, skinless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil
4 tablespoons lime juice
1/2 cup chicken broth

On a plate, mix together first seven ingredients. Sprinkle the seasoning mixture on both sides of chicken breasts.

In a skillet, heat butter and olive oil together over medium-high heat. Saute chicken until golden brown (about 5 minutes on each side-I actually had to do mine a little longer) and it is done through.

Remove chicken and add lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the pan. Keep cooking until sauce has reduced slightly. Add chicken back to the pan to thoroughly cover and serve.


Both of these recipes make really juicy, moist chicken, and best of all they hardly take any time to prepare, which I love! Hopefully this will give some of you ideas for when you need something quick and easy, and totally delicious!

Yay! I like quick and easy recipes! I also like new ideas (I seem to make the same thins over and over...). We have some frozen chicken breasts left from our big shopping spree with Kathy, so I will have to give these a try this weekend! Thanks, Wend!

Those both sound good! Although the second one doesn't LOOK easy just because it has so many ingredients, but I'll take your word for it;) You wanna come cook dinner for us?

MMMMM they are good! I just had the ranch chicke leftovers for lunch and it was great :)
